Ingredients:
Dough:
1,5 cup of sugar
4 eggs
3/4 cups of oil
2 cups of cake flour or semi-coarse
25g of baking powder
1ts of cinnamon
1ts of vanilla extract
5 cups of grated carrot
3/4 cups of grated nuts
+ add the desired amount of raisins
Frosting:
120g of butter, softened
250g of cream cheese, softened
1 cup of powdered sugar
1ts of vanilla extract or vanilla sugar
+ chocolate could be grated on top
Directions:
Preheat the oven to 180 °C. Mix all the ingredients needed for the dough in a bowl. Blend well and make sure the mixture is quite wet. Grease and flour a pan. Then you can pour in the mixture and spread it evenly. Bake for 30 minutes. Check by inserting a toothpick into a few places of the cake. The toothpick has to come out clean.
Frosting:
Mix butter and sugar. Add cream cheese and vanilla extract. Blend until the mixture is perfectly smooth.
Frost the cake when it's completely cool.
Preparation 30 min.
Baking 30 min.
